Extremely Fresh Cracked Black Pepper
Thu Jun 24, 2010 7:06:14 pm

I have known for a long time that pepper tastes much better when freshly ground in a pepper mill than when preground. What I failed to realize until now, is that it is even better when the grinding is done inside my mouth. I discovered this when my pepper mill broke, spilling whole peppercorns everywhere.

You tried this and didn't like it?

Do you bite them with other food, or just the peppercorns?

I like the Peppercorn Medley, which has black, red, yellow and (I think) green peppercorns.

In the food.

With food or separately?

You should try it with food.

I will try this soon for the sake of curiosity, but I don't think I will do it often because of the increased risk of tooth damage associated with grinding small, hard foods. I've used coarse ground pepper to achieve a similar effect, but I expect the flavor of whole peppercorns will be much fresher and stronger.

It wasn't that hard to grind in my mouth. I'm not sure if that is the consequence of the type of pepper. I did this with Tellicherry peppercorns. They are larger than normal and get extra ripening time.
